Ingredients
1 cup grated orange zest (from 3–4 oranges)
3/4 cup freshly squeezed orange juice
1/2 cup raw honey
2 large eggs
1/2 cup almond flour
1/4 cup oat flour (gluten-free certified)
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground cloves
Pinch of sea salt
2 tbsp unsalted butter, melted & cooled
Edible gold sparklers (food-grade)
Fresh orange slices, for garnish
Instructions
1. Preheat oven to 350°F (175°C). Grease a 6-cup muffin tin or line with paper liners.
2. In a medium bowl, whisk together orange zest, orange juice, honey, and eggs until smooth.
3. Stir in melted butter, then fold in almond flour, oat flour, baking powder, cinnamon, cloves, and salt until just combined.
4. Divide batter evenly among muffin cups. Bake 18–22 minutes, or until a toothpick comes out clean.
5. Cool cakes in pan 5 minutes, then transfer to a wire rack.
6. Once cool, top each cake with 1–2 edible gold sparklers and a fresh orange slice.
7. Serve warm or at room temperature, with a cup of tea for maximum hobbit hospitality.
Notes
For vegan option: replace honey with 1/3 cup pure maple syrup and use flax eggs.
Double the glaze (2 tbsp honey + 1 tsp orange juice) and drizzle warm cakes for extra sparkle.
Ensure edible sparklers are food-grade and sourced from baker’s supply stores.
Store in an airtight container for up to 3 days.
