Instructions
Step 1: Prep the Fruit
Wash and slice your strawberries. If you’re using fresh pineapple, dice it into small chunks. Frozen fruit works just as well and helps chill the punch naturally.
Step 2: Blend the Tropical Base
In a blender, combine the diced pineapple, sliced strawberries, orange juice concentrate, cream of coconut, and coconut rum. Blend until smooth and creamy. If your blender is small, do this in batches.
Step 3: Add Ice and Blend Again
Add the crushed or nugget ice to the blender. Pulse until the mixture reaches a thick, slushy consistency. You can add more ice for a frostier texture or reduce it slightly if you prefer a thinner consistency.
Step 4: Taste and Adjust
Give the punch a taste. Want more citrus zing? Add a bit more orange concentrate. Need it stronger? A splash more rum. Want it lighter? A bit of pineapple juice or club soda will make it more sippable and fizzy.
Step 5: Serve and Garnish
Pour the punch into a large pitcher or punch bowl. Serve in glasses garnished with pineapple wedges, strawberry slices, and cocktail umbrellas for full-on vacation vibes.
Notes
- Use cream of coconut, not coconut milk. Cream of coconut is sweet and thick, and it’s key for that classic piña colada flavor.
- If using frozen fruit, you might need less ice.
- Blending in stages helps you control the final texture. Don’t over-blend or it may turn too thin.
- If your blender struggles with all the ingredients, blend the fruit first and then gradually add the liquid and ice.
