  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons sriracha sauce
  • 1/2 cup mayonnaise
  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1 tablespoon rice vinegar (for rice)
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 1 small cucumber, julienned
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

1. Rinse the sushi rice under cold water until it runs clear. Cook with water in a pot, then stir in vinegar and salt. Cover and let rest for 10 minutes.

2. Heat olive oil in a skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink and opaque.

3. In a small bowl, mix soy sauce, rice vinegar, sesame oil, sugar, and sriracha. Add to the shrimp and cook for 1 more minute.

4. Using a round mold, layer sushi rice on the bottom, then shrimp, avocado slices, and cucumber. Press lightly to shape.

5. Top with sesame seeds, cilantro, or green onions. Serve immediately.

Notes

Pat shrimp dry before cooking for the best sear.

Let rice cool slightly before stacking for firmer layers.

Assemble just before serving to keep everything fresh.

Add toppings like eel sauce, tobiko, or chili oil for extra flavor.
