Ingredients
4 tilapia fillets (fresh or frozen)
2 red bell peppers
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
1. Preheat the oven to 400°F (200°C). Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
2. Roast the peppers for about 20 minutes until the skins are blistered and charred. Wrap them in foil and let them rest for 5 to 10 minutes.
3. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute.
4. Peel the roasted peppers and add them to a blender with the smoked paprika, salt, and black pepper. Blend until smooth.
5. Cook the tilapia fillets in the same skillet for 3 to 4 minutes per side until they flake easily.
6. Pour the roasted pepper sauce over the cooked tilapia and simmer for 2 minutes.
7. Garnish with fresh parsley if desired and serve immediately.
Notes
For extra flavor, add a squeeze of fresh lemon juice before serving.
Jarred roasted red peppers can be substituted to save time.
Serve with rice, couscous, roasted vegetables, or crusty bread.
Store leftovers in the refrigerator for up to 3 days.
