Ingredients
1 tablespoon extra virgin olive oil
1 yellow or sweet onion, diced
1 cup pumpkin puree
1 teaspoon dried thyme
1 tablespoon minced garlic
3/4 cup unsalted or low-sodium vegetable broth
Salt and black pepper to taste
Instructions
1. Heat olive oil in a medium skillet over medium heat. Add diced onion and caramelize until lightly golden brown, about 9-10 minutes, stirring occasionally.
2. Add minced garlic and dried thyme and sauté for 1-2 minutes, stirring frequently.
3. Combine the caramelized onions, pumpkin puree, and vegetable broth in a blender.
4. Start blending at low speed and gradually increase to high. Blend for 30-60 seconds, or until smooth.
5. Season the sauce to taste with salt and black pepper.
6. Serve the pumpkin pasta sauce over cooked pasta or your favorite vegetable noodles.
7. Cool any extra sauce and store it in the refrigerator or freeze half for another meal.
Notes
The recipe makes 8 servings. One serving is a heaping 1/4 cup, which works well with a 2-ounce serving of pasta.
The sauce freezes well, so you can freeze half for another meal.
