One Pan Autumn Chicken Dinner with golden roasted chicken thighs, sweet potatoes, Brussels sprouts, sliced Fuji apples, shallots, and crispy bacon arranged on a baking sheet.

One Pan Autumn Chicken Dinner

This One Pan Autumn Chicken Dinner is a comforting seasonal meal featuring juicy roasted chicken thighs, sweet potatoes, Brussels sprouts, Fuji apples, shallots, and smoky bacon. Fresh garlic and autumn herbs add rich flavor while everything roasts together on one pan.

  • Total Time: 50 minutes
  • Yield: 5 servings 1x

Ingredients

Scale

5 (6 – 7 oz) bone-in, skin-on chicken thighs

4 Tbsp olive oil, divided

1 1/2 Tbsp red wine vinegar

3 cloves garlic, minced

1 Tbsp each minced fresh thyme, sage and rosemary

Salt and freshly ground black pepper, to taste

1 large sweet potato (about 16 oz), chopped into 3/4-inch cubes

1 lb Brussels sprouts, sliced into halves

2 medium Fuji apples, cored and sliced into 3/4-inch half moons

2 shallot bulbs, peeled and sliced about 1/4-inch thick

4 slices hickory smoked bacon, chopped into 1-inch pieces

2 Tbsp chopped parsley, for garnish (optional)

Instructions

1. Preheat oven to 450°F (230°C).

2. Pour 2 Tbsp olive oil, red wine vinegar, garlic, thyme, sage, and rosemary into a gallon-size resealable bag.

3. Add chicken thighs, season with salt and pepper, then seal the bag and massage the marinade over the chicken until evenly coated. Set aside while preparing the vegetables.

4. Place sweet potato, Brussels sprouts, apples, and shallots on an 18 x 13-inch rimmed baking sheet.

5. Drizzle with the remaining 2 Tbsp olive oil, then toss to coat evenly. Season with salt and pepper to taste and spread into an even layer.

6. Set the marinated chicken thighs over the vegetable and apple mixture.

7. Separate any bacon pieces that are stuck together, then sprinkle the bacon over the vegetables and apples.

8. Roast in the preheated oven for 30 – 35 minutes, or until the chicken and vegetables are golden brown and the chicken reaches 165°F (74°C) in the center.

9. Broil during the final few minutes if desired for extra golden and crispy chicken skin. Watch carefully while broiling.

10. Garnish with chopped parsley if desired and serve warm.

Notes

For the best browning, spread the vegetables into an even layer without overcrowding the pan.

Keep the chicken skin facing upward while roasting for crispier skin.

Cut the sweet potato and apples into evenly sized pieces so they roast consistently.

Use an instant-read thermometer to confirm the chicken reaches 165°F (74°C).

Broil only during the final few minutes for extra-crispy chicken skin, and watch closely to prevent burning.
