¼ cup whole wheat flour

3½ cups all-purpose flour, plus more for rolling

2 teaspoons kosher salt

1⅔ cups lukewarm water

2 teaspoons sugar

2 teaspoons active dry yeast

2 teaspoons olive oil

For the Balsamic Reduction:

½ cup balsamic vinegar

1 nectarine, thinly sliced

Ricotta, goat cheese, mozzarella, or mascarpone

Freshly shaved Parmigiano Reggiano

Instructions

1. In a large mixing bowl or stand mixer, combine the flours and salt.

2. In a small bowl, stir together lukewarm water, sugar, and yeast. Let sit for 5 minutes until foamy. Stir in olive oil.

3. Slowly add the wet ingredients to the dry and knead until dough is smooth and elastic, 8–10 minutes.

4. Divide into four equal balls and place on oiled parchment. Cover with plastic wrap and let rise in a warm spot for 2 hours.

5. Roll dough thinly on a floured surface. If it’s too elastic, let it rest for 15–20 minutes.

6. To make the balsamic reduction, simmer vinegar in a small pan over medium-high heat until thickened. Remove and let cool.

7. Preheat oven to 500°F. Place dough on parchment-lined or greased pan. Brush with olive oil.

8. Add cheese, then top with nectarine slices. Sprinkle Parmigiano over top.

9. Bake for 10 minutes or until crust is golden and cheese is bubbling.

10. Remove from oven, top with fresh basil, and drizzle with balsamic reduction. Slice and serve warm.

Notes

Use very ripe nectarines for the best flavor and texture.

Don’t overload the pizza with toppings to avoid a soggy crust.
