Ingredients
½ pound white American cheese, cubed
¼ cup whole milk (add more as needed)
1 tablespoon unsalted butter
1 (4-ounce) can diced green chilies
¼ teaspoon ground cumin
¼ teaspoon garlic salt
⅛ teaspoon cayenne pepper (or a pinch, to taste)
Optional: diced tomatoes, sliced jalapeños
Optional: cooked ground beef or sausage
Instructions
1. In a small saucepan over low heat, combine the white American cheese, milk, and butter.
2. Stir frequently until the cheese melts completely and the mixture becomes smooth and creamy.
3. Stir in the diced green chilies, cumin, garlic salt, and cayenne pepper.
4. Mix until fully incorporated and adjust seasoning to taste.
5. If the dip is too thick, add extra milk 1 tablespoon at a time until the texture is just right.
6. Transfer to a bowl. Garnish with fresh tomatoes and jalapeños if desired.
7. Serve hot with tortilla chips, warm tortillas, or as a topping for tacos, nachos, or enchiladas.
Notes
Use low heat to avoid grainy texture.
Chilling leftovers? Reheat with a splash of milk for creaminess.
White American cheese melts best, but Monterey Jack or white Velveeta also work.
