  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup canned corn, drained
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream, optional for topping

Instructions

1. Preheat oven to 400°F (200°C). Scrub and pierce sweet potatoes with a fork. Bake directly on the oven rack for 45–50 minutes until fork-tender.

2. While potatoes bake, heat olive oil in a skillet over medium heat. Add diced onion and cook 3–4 minutes until translucent.

3. Add minced garlic and cook 30 seconds until fragrant.

4. Stir in ground turkey, breaking it up as it cooks, until browned and no longer pink, about 5–7 minutes.

5. Season with smoked paprika, chili powder, cumin, sea salt, and black pepper. Stir to coat.

6. Add black beans, corn, and diced tomatoes. Simmer 5–7 minutes to blend flavors.

7. Remove sweet potatoes from the oven. Slice each down the center without cutting through. Mash the inside lightly with a fork.

8. Fill each potato with turkey mixture, top with shredded cheese, and return to the oven for 5 minutes until cheese is melted.

9. Garnish with fresh cilantro and a dollop of Greek yogurt or sour cream if desired.

Notes

You can swap ground turkey for ground chicken, beef, or plant-based meat.
