Ingredients
For the Steak:
2 ribeye steaks
Salt and pepper to taste
1 tablespoon olive oil
2 tablespoons butter
For the Mushroom Gravy:
1 cup mushrooms, sliced
1 tablespoon butter
½ cup beef broth
½ cup heavy cream
1 teaspoon thyme (fresh or dried)
Salt and pepper to taste
For the Mashed Potatoes:
2 large potatoes, peeled and chopped
¼ cup butter
½ cup milk
Salt and pepper to taste
Instructions
1. Boil the chopped potatoes in salted water for about 15 minutes, or until fork-tender. Drain and return to the pot. Add butter and milk, then mash until smooth. Season to taste and keep warm.
2. Pat steaks dry and season both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear steaks for 4–5 minutes per side for medium-rare. During the last minute, add butter and spoon it over the steaks. Let rest for 5 minutes.
3. In the same skillet, melt 1 tablespoon of butter. Add mushrooms and cook for 3–4 minutes until soft. Stir in broth, cream, and thyme. Simmer for 5–6 minutes until slightly thickened. Season to taste.
4. Serve steak with mashed potatoes and spoon mushroom sauce over the top. Garnish with thyme or parsley if desired.
Notes
Use a meat thermometer to check for doneness: 130°F for medium-rare.
Warm the milk before adding to potatoes for smoother texture.
Deglaze the skillet with broth or wine before making gravy for deeper flavor.
Steak is best enjoyed fresh, but mashed potatoes and sauce store well.
