Bright, creamy, and actually worth making again, this Green Goddess Avocado Salad is one of those salads that doesn’t feel like a compromise. It looks simple, but there’s enough going on with fresh herbs, crisp textures, and rich avocado that it doesn’t get boring halfway through.

For the salad:

1 large romaine lettuce, chopped

1 avocado, sliced or cubed

1/2 cucumber, diced

150g cherry tomatoes, halved

2 tablespoons mixed seeds (sunflower or pumpkin work well)

For the green goddess dressing:

1/2 ripe avocado

2 tablespoons olive oil

2 tablespoons Greek yogurt

1 tablespoon lemon juice

1 small garlic clove

1 handful fresh herbs (parsley, basil, or a mix)

Salt and black pepper to taste

Instructions

1. Make the dressing: Add the 1/2 ripe avocado, olive oil, Greek yogurt, lemon juice, garlic, and fresh herbs to a blender or small food processor. Blend until smooth. The texture should be thick but spoonable. Taste and adjust seasoning with salt and pepper.

2. Prepare the salad base: Add the chopped romaine lettuce to a large salad bowl. Scatter in the diced cucumber and halved cherry tomatoes.

3. Add the dressing: Spoon the prepared green goddess dressing over the salad base and toss gently until everything is lightly and evenly coated.

4. Add the avocado: Add the remaining sliced or cubed avocado last, folding it through carefully so it keeps its shape.

5. Finish and serve: Sprinkle the mixed seeds over the top for texture and add a final pinch of salt or pepper if needed. Serve immediately in a wide bowl.

Notes

Use an avocado that is ripe but still firm so it holds its shape beautifully when folded into the salad.

Keep the dressing thick so it properly clings to the leaves and vegetables instead of pooling at the bottom of the bowl.

Add the sunflower or pumpkin seeds at the absolute end right before serving so they stay perfectly crisp.

This salad is best enjoyed fresh. If you are meal prepping, store the herby green dressing separately and toss it with the fresh ingredients just before serving to prevent wilting.
