Ingredients
- 1 pound boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon chili powder, optional
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons honey
- ⅓ cup BBQ sauce
- 1 tablespoon lemon juice
- 8 small flour or corn tortillas
- ½ cup shredded lettuce
- ½ cup shredded cheddar or Monterey Jack cheese
- ¼ cup diced red onion
- ¼ cup chopped fresh cilantro
- Lime wedges
Instructions
1. Pat the chicken dry and place in a bowl. Drizzle with olive oil and sprinkle with salt, pepper, paprika, garlic powder, onion powder, and chili powder. Rub until coated. Let rest 15 to 20 minutes if possible.
2. Heat a skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side until golden and cooked through, reaching 165°F. Let rest for 5 minutes.
3. In the same skillet, melt the butter over medium heat. Add garlic and cook for 30 seconds. Stir in honey, BBQ sauce, and lemon juice. Simmer for 2 minutes until glossy.
4. Slice or shred the chicken, then return to the skillet. Toss to coat with sauce. Let sit 1 minute.
5. Warm tortillas in a skillet or microwave. Char over a gas flame for extra flavor if desired.
6. Assemble tacos with lettuce, chicken, cheese, onion, and cilantro. Finish with a squeeze of lime juice.
Notes
Chicken thighs are juicier than chicken breasts and work well in this recipe.
Shredding the chicken helps it hold more sauce.
Warm tortillas are less likely to crack and have better flavor.
Lime juice added at the end brightens the flavors.
