Ingredients
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons sugar (adjust to taste)
- 1 cup heavy cream
- 2 cups club soda or sparkling water
- 1 teaspoon vanilla extract
- Ice cubes
- Fresh mint leaves for garnish (optional)
Instructions
1. In a bowl, combine sliced strawberries and sugar. Let sit for 10 minutes to release juices.
2. In a separate bowl, whisk heavy cream and vanilla extract until soft peaks form.
3. Spoon a few tablespoons of the strawberry mixture into the bottom of each tall glass.
4. Fill glasses with ice cubes and pour in club soda or sparkling water until about three-quarters full. Gently stir.
5. Top with a generous dollop of whipped cream.
6. Garnish with fresh mint leaves and serve immediately.
Notes
Chill glasses before serving for extra refreshment.
For more intense flavor, blend the strawberries into a puree.
Assemble just before serving to keep the soda fizzy and the cream fluffy.
