The Best Southern Peach Cobbler

Peach cobbler is the ultimate Southern comfort dessert — golden, buttery crust atop warm, syrupy peaches with hints of cinnamon, nutmeg, and vanilla. Whether it’s a Sunday dinner, a holiday gathering, or a cozy weeknight treat, this classic dessert brings back memories of home-cooked warmth and old-fashioned hospitality.

  • Total Time: 50–65 minutes
  • Yield: Serves 8

Ingredients

Scale

For the Peach Filling

  • 2 bags frozen peaches (20 oz each)
  • 1 cup granulated sugar (white sugar)
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional but recommended)
  • ½ tbsp cinnamon
  • ½ tsp nutmeg
  • 2 tsp corn starch
  • 1 tsp cream of tartar
  • ½ stick unsalted butter, room temperature
  • 2 tbsp water
  • 1 tsp fresh lemon juice

For the Cobbler Topping

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 tsp baking powder
  • 1 tbsp cinnamon (reserve ½ tbsp for garnishing)
  • 1 stick unsalted butter, cold
  • ¼ cup boiling hot water
  • ½ tsp salt
  • 3 tbsp granulated sugar (for dusting the top)

Instructions

Step 1: Preheat and Prep

Preheat your oven to 375°F (190°C). Spray a 9×13 baking dish with non-stick spray to prevent sticking.

Step 2: Mix the Peach Filling

In the prepared dish, combine the frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract (if using), cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice.

Stir everything together in the baking dish until the peaches are evenly coated with the mixture.

Step 3: Pre-Bake the Filling

Cover the dish tightly with aluminum foil and bake in the oven for 20 minutes. This helps the sugars and spices start to thicken and blend with the peaches.

Step 4: Prepare the Cobbler Topping

While the peaches are baking, in a large bowl combine:

  • Flour
  • Granulated sugar
  • Brown sugar
  • Baking powder
  • Salt
  • ½ tablespoon of cinnamon

Using a pastry cutter, fork, or clean hands, cut in the cold butter until the mixture resembles coarse crumbs.

Add the boiling hot water and stir gently until the dough just comes together. It should resemble drop biscuit dough — thick and slightly sticky.

Step 5: Add Topping to the Peaches

Remove the peach mixture from the oven. Spoon the dough over the peaches in golf ball-sized dollops, leaving a little space between each for even cooking.

Peaches should remain partially visible between the dollops — don’t spread the dough to cover them entirely.

Step 6: Sprinkle with Cinnamon Sugar

Mix the remaining ½ tablespoon of cinnamon with 3 tablespoons of sugar. Sprinkle this cinnamon sugar mixture over the top of the dough for added sweetness and crunch.

Step 7: Bake Until Golden

Return the dish to the oven, uncovered, and bake for another 30–45 minutes. Begin checking at the 30-minute mark — the cobbler topping should be golden brown and crisp on the edges.

Once done, remove from oven and let it rest for at least 10 minutes before serving.

Notes

  • If using fresh peaches, taste them first. If very sweet, reduce added sugar slightly.
  • Don’t overmix the topping dough — it should remain rustic and biscuit-like.
  • For extra crispiness, broil the cobbler for 1–2 minutes at the end (watch closely to avoid burning).
